Ingredients:

Directions:

  1. Sift the two flours into a bowl and make a well in the center.
  2. Break the eggs and add the olive oil. Mix until all the flour has been combined. Add a little water or extra flour, if required. (I have never needed to however) Draw the dough together.
  3. Knead on a lightly floured work surface for about 10 minutes. I put a timer on and always do exactly 10 minutes. Until very smooth. Rub the dough with flour and wrap tightly in plastic wrap. Let sit for 1 hour.
  4. Now the dough is ready for your pasta machine. (Unless you plan on using a rolling pin and cutting it by hand!).
  5. Remember when you cook homemade pasta it only takes about three minutes when you boil the noodles.
