HOME Style Potato Salad

Ingredients:

  • 2 lbs potatoes
  • 2 medium carrots
  • 1 tbsp finely chopped onion
  • 3/4 cup cooked peas
  • 1 tsp finely chopped mint
  • 1/2 cup mayonnaise

Directions:

  1. Peel and dice potatoes and carrots.
  2. Cook potatoes and carrots in boiling salted water until tender.
  3. Drain and allow to cool.
  4. In a basin combine onion, mint, cayenne pepper and mayonnaise, mix well.
  5. Fold in potatoes, carrots and cooked peas.
  6. Refrigerate before serving.
  7. To serve, spoon portions into crisp lecttuce leaves.
