Holiday Whipped Sweet Potatoes

Ingredients:

  • 3 lbs sweet potatoes or 3 lbs yams
  • 2 eggs
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 tbsp orange juice
  • 2/3 cup brown sugar
  • 1/4 cup melted butter

Directions:

  1. Peel and cut sweet potatoes into small pieces. Boil until soft and mash and whip until smooth.
  2. In a separate bowl, combine eggs, 1/4 c brown sugar, 1/4 c butter, salt, cinnamon and orange juice. If mixture seems a little too thick, add a few drops of water for smoothness.
  3. Add egg mixture to sweet potatoes and mix until smooth.
  4. Spread into a greased rectangular baking dish (11x17).
  5. Top with pecans, then brown sugar, then drizzle with melted butter.
  6. Bake uncovered at 375 for 20 minutes. Watch closely as it will burn easily.
