Ingredients:

  • 3 1/4 cups flour
  • 1 1/2 tsp salt
  • 3 cups sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 4 eggs
  • 1 (20 oz) can pumpkin
  • 1 1/2 cups pecan pieces

Directions:

  1. Combine flour, baking powder, baking soda, salt, sugar, cinnamon, and nutmeg in mixing bowl.
  2. Blend in eggs, oil, pumpkins and mincemeat.
  3. Stir in nuts by hand.
  4. Then pour into 5 greased and floured 7 x 3 1/2 bread pans.
  5. Bake at 350 until bread is golden brown on top and passes the toothpick test.
  6. Average 50 min and less time for smaller pans.
