Herb-roasted Dijon Potatoes

Ingredients:

  • 2 tbsp olive oil
  • 1/2 tsp italian seasoning
  • 6 medium red potatoes , cut into cubes

Directions:

  1. Mix all ingredients together except potatoes
  2. Place potatoes in greased 13x9 in pan
  3. Toss with dressing mixture
  4. Bake at 425 degrees for 35-40 minutes, stirring occasionally
