Ingredients:

Directions:

  1. Place potatoes in a saucepan and cover with water.
  2. Bring to a boil; reduce heat.
  3. Cook uncovered, just until tender, about 10 minutes.
  4. Meanwhile, in a skillet coated with non-stick cooking spray, saute green and red peppers, corn, onion, and garlic until tender.
  5. Cut sausage into small chunks; add to vegetable mixture.
  6. Cook, uncovered, for 6 to 8 minutes or until heated through.
  7. Drain potatoes; add to vegetable mixture.
  8. Add olive oil and pepper; mix well.
  9. Transfer to an ungreased 9x13 inch baking dish.
  10. Bake, uncovered, at 350 degrees Fahrenheit, for 35 minutes or until heated through.
