  1. Boil or microwave potatoes until soft.
  2. Peel (if desired). Cut into large pieces. Mash with potato masher or put through ricer. Mix in remaining ingredients.
  3. Sprinkle with chopped parsley and/or seasoning salt or paprika for color.
