Healthy Amish Baked Oatmeal

Ingredients:

  • 1/2 cup brown sugar (or 1/4 cup)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/3 cup raisins
  • 1 1/2 cups fat-free milk
  • 1/2 cup applesauce
  • 2 tbsp butter
  • 1 large egg, beaten
  • cooking spray

Directions:

  1. Prepare and refrigerate overnight (nuts are optional).
  2. Combine first 7 ingredients in a medium bowl.
  3. Combine the milk, applesauce, butter and egg.
  4. Add milk mixture to the oat mixture: stir well.
  5. Pour into an 8 inch square baking dish coated with cooking spray.
  6. Add more milk, approximately 1/2 cup in the morning. Bake at 375*.
  7. For 60 minutes. Serve warm.
  8. 5- 2/3cup servings.
