Hasselback Potatoes Le Cordon Bleu Home Collection

Ingredients:

Directions:

  1. Preheat oven to 425
  2. Oil a roasting pan and set aside
  3. Peel the potatoes to approximately the same size
  4. Cut off very thin slice from bottom of potato so it will not roll
  5. Slice into hasselbacks by placing the handle of a wooden spoon next to the potato and making thin cuts in potatoes to resemble a fan.
  6. The spoon handle will prevent cutting through the bottom of the potato
  7. Place potatoes sliced side up in the prepared pan
  8. Sprinkle with salt and pepper, dot with butter, then bake for 30 minutes
  9. Remove from oven and baste with the melted butter
  10. Sprinkle with the bread crumbs and cheese
  11. Bake another 15 to 30 minutes or until potatoes are tender to the point of a sharp knife.
  12. The flavor may be enhanched by sprinkling some chopped fresh or dried rosemary or thyme into the bread and cheese topping
