Ingredients:

Directions:

  1. Preheat oven:375 degrees
  2. Coat 11 by 7 inch glass baking dish or a 2 quart cassorole with cooking spray.
  3. TO PREPARE CUSTARD:
  4. Whisk egg whites,eggs and milk in a medium bowl.
  5. Add mustard,pepper,and rosemary,whisk to combine.
  6. Toss bread,spinach,roasted red peppers and ham in a large bowl.
  7. Add the custard and toss well to coat.
  8. Transfer to the baking dishnand push down to compact.
  9. Cover with foil.
  10. BAKE until the custard has set,40-45 minutes.
  11. UNCOVER,sprinkle with cheese and continue cooking until the pudding is puffed and golden on the top,15-20 minutes more.
  12. Transfer to a wire rack and cool for 15-20 minutes before serving.
  13. TIP:To wilt greens,rinse greens in cool water.transfer to a large microwave=safe bowl,cover with plastic wrap and punch several holes in the wrap.
  14. Microwave on high until wilted 2-3 minutes.Squeeze out any excess moisture from the greens before adding them to the receipe.
