Ham and Cheese Stuffed Potatoes

Ingredients:

  • 4 large idaho baking potatoes , scrubbed
  • 1/4 lb bacon, diced (1 cup)
  • 1/3 cup milk
  • 1 tbsp butter
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions:

  1. Arrange oven rack in bottom third of oven.
  2. Heat oven to 450°F.
  3. Prick potatoes twice with fork.
  4. Cook in microwave on high 12-14 minutes turning halfway through.
  5. Wrap potatoes tightly with foil and let stand 3 minutes.
  6. Cut potatoes in half lengthwise.
  7. Scoop out centers, leaving 1/4-inch thick shells.
  8. Transfer potatoes filling to a bowl and combine with remaining ingredients except paprika.
  9. Divide and fill shells with stuffing; sprinkle tops with paprika.
  10. Arrange potatoes on jelly-roll pan.
  11. Bake 5 minutes, until browned on top.
