Guacamole Burgers With Spicy Chile Con Queso

Ingredients:

Directions:

  1. To make the queso: in a large saucepan, melt the butter over medium heat; add in the onion and stir/saute 5-7 minutes or until softened.
  2. Stir in the tomatoes, beans, cheese, chipotle powder and cumin, stirring constantly until the cheese is completely melted; keep warm on very low heat.
  3. To make the bugers: Mix the first 6 ingredients together in a large bowl until well combined.
  4. Gently fold in the avocado; form the mixture into 4 patties, each about 1/2 inch thick.
  5. Lightly oil the grill or grill pan over medium-high heat; cook the burgers to the desired degree of doneness, 2-4 minutes per side for medium rare.
  6. Serve on toasted sesame seed buns; top with a generous dollop of Spicy Chili Con Queso.
