Ingredients:

  • 1/4 cup egg beaters
  • 3/4 cup pumpkin
  • 1/8 tsp cloves
  • 1/8 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 2 tsp splenda

Directions:

  1. Whisk together egg beaters and evaporated milk. Add 3/4 cup pumpkin and mix well.
  2. Add cloves, nutmeg, cinnamon and vanilla, mix together.
  3. Add Splenda and mix.
  4. Spray microwave-safe dish with Pam.
  5. Pour pumpkin mixture in dish and cover with waxed paper.
  6. Microwave for 5 minutes at the #8 power setting.
