Ground Cherry Pie

Ingredients:

  • 1 pie shell, unbaked (either storebought or your own recipe)
  • 2 eggs
  • 1/8 tsp salt
  • 2/3 cup sugar
  • 1 tbsp flour
  • 1 cup milk
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 425°F.
  2. Line a pie pan with pastry and fill with ground cherries.
  3. Beat eggs with salt; add sugar and flour.
  4. Add milk and vanilla; stir well.
  5. Pour over cherries and bake for ten minutes, then reduce the temperature to 350F and continue baking for an additional 25 to 30 minutes or until knife inserted in center comes out clean.
  6. Serve plain or garnished with lightly sweetened whipped cream (also delicious with a meringue topping).
