Grilled Spring Lamb Chops (From Fwdgf)

Ingredients:

  • 2 tbsp olive oil
  • 1/2 tbsp dijon mustard
  • 2 medium shallots
  • 1/2 cup fresh mint
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions:

  1. Lay the chops in a baking sheet. Combine oil, mustard, shallots, and mint in a food processor and pulse until a medium textured paste is formed.
  2. Spread the paste on each side of the chops. Season with salt and black pepper and let marinate at room temperature for 30 minutes.
  3. Broil or grill the chops 3 minutes on each side for med-rare. Serve immidiately.
