  1. In a heavy skillet, cook the bacon to the desired crispness. Drain bacon on paper towel. Discard fat in pan and wipe out.
  2. Return bacon to skillet and add maple syrup. Bring to a boil then reduce to a simmer. Cook, stirring frequently, until thick and caramelized. Set aside off heat.
  3. Preheat a cast-iron skillet over medium heat. Butter one side of each slice of bread. Working quickly, place two slices of bread in the skillet, butter side down. Divide half the cheese between the two slices (1/4 of the total on each slice). Divide the bacon and glaze between the two slices. Divide the remaining cheese evenly, then top with the remaining bread, butter side up. Press lightly with a spatula.
  4. Cook, covered, 5 minutes, or until well-browned. Carefully flip each sandwich and cook, uncovered, another 5 minutes or until well-browned.
