Grilled Potatoes With Cilantro Peanut Sauce

Ingredients:

Directions:

  1. In large pot,combine potatoeswith enough water to cover them bu about 2 . Add 1 Tbs kosher salt. Set pot over high heat and cook until the water boils,10 to 12 mins. Continue to boil the potatoes until they are not at all crunchy in the middle,10 to 12 mins.,but they should not be falling apart. Check one by cutting in half and biting into it. Drain in colander.
  2. Preheat grill to med. When potatoes are cool enough to handle,cut each in half or quarters. Place in med bowl and add oil,salt and pepper to taste;add cayenne. Stir to coat the potatoes evenly.
  3. To prepare sauce,combine all the sauce ingredients in a blender. Process till smooth. Should have consistency of pesto. If too thick,add a bit more water. If desired season with a bit more salt and pepper.
  4. Grill potatoes directly over med. heat,with lid closed as much as possible,until nicely marked and tender,8 to 10 mins,turning occasionally. Arrange potatoes on plate and serve the sauce on the side for dipping.
