Green Noodle Gratin With Prosciutto

Ingredients:

  • 4 tbsp of butter in first step (you need 1 stick overall)
  • 1/4 cup of flour
  • 1/2 tsp of salt
  • 1/4 tsp of pepper
  • 2 cups of hot milk
  • 1/4 cup of cream
  • 6 ozs. of spinach noodles
  • 2 tbsp of butter
  • 1/4 lb. of prosciutto ham
  • 1/4 cup of parmesan cheese
  • 2 tbsp of melted butter

Directions:

  1. In a deep saucepan, heat the first four tablespoons of butter.
  2. Stir in the flour, salt and pepper.
  3. Whisk in the hot milk, stirring all the while.
  4. Cook until thick and smooth about 5 minutes.
  5. Add 1/4 cup of cream.
  6. Preheat oven to 350 degrees
  7. Cook six ounces of green noodles in 3 quarts of boiling salted water for 8 minutes.
  8. Drain well.
  9. Dump noodles into a buttered shallow baking dish.
  10. Toss with cream sauce and the some of the butter. (two tbsp)
  11. Cover the top of the noodles with overlapping slices of prosciutto ham, sprinkle generously with the Parmesan and drizzle the remaining melted butter over the top.
  12. Bake in the oven for 10 minutes and serve with extra freshly grated parmesan cheese.
  13. The prosciutto crisps, the noodles and cheese are melded into ultimate comfort food. Decadent and yummy.
