Ingredients:

Directions:

  1. Simmer the watercress, spianch and tarragon in water a few mins to soften
  2. Drain, rinse in cold water
  3. Press out water and mash into a pulp
  4. Add to mayo with lemon juice
  5. Blend well and chill
  6. Cut unpeeled cucumbers in half lengthwise
  7. Place in pan, cover with water, simmer 2 minutes
  8. Remove , drain and cool in ice water
  9. Drain very well
  10. When cold hollow out centers leaving a shell about 1/4 inch thick
  11. Fill the hollows with the diced beans and cover with the chilled dressing and garnish with the chives
