Ingredients:

Directions:

  1. THE SAUCE:
  2. Saute the onions in 2 tablespoons of the oil for about 5 minutes
  3. Add garlic, saute for 1 minute
  4. Add the tomatoes, break them up with spoon
  5. Add tomato sauce, sugar, salt, oregano, basil, 1/4 teaspoon pepper, and the fennel seeds.
  6. Cover the sauce pan and cook for 1 hour over low heat.
  7. Uncover and cook 1 hour 20 minutes longer stirring occasionally.
  8. Remove from heat and add the parsley.
  9. THE CHEESE FILLING:
  10. Combine all cheeses, the egg, 1/4 teaspoon pepper and 2 tablespoon parsley in a large bowl
  11. Remove 1 3/4 cup to a medium bowl
  12. Drain the spinach well and add to the medium bowl.
  13. PASTA SHELLS
  14. Cook the pasta shells el dente
  15. Spray 2 9x12 glass dishes
  16. Stuff half with the spinach, half with the plain
  17. Cover the bottoms of pans with the sauce,
  18. Place shells on the sauce
  19. Brush shells with the remaining 2 tablespoons oil.
  20. Place in a hot oven 425 COVERED
  21. Uncover the pans and bake for 10 minutes longer or until heated through and the sauce is bubbly.
  22. Let rest for about 5 minutes.
  23. You can prepare the day before an place in frig until time to bake... this makes it nice as you can spend time with quests.
