Greek Yogurt Banana Bread (Low-fat)

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup br sugar
  • 2 eggs
  • 1/4 cup applesauce
  • 2.25 cup flour
  • 1.5 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 325 - grease two 8.5 x 4.5 inch bread pans
  2. In large bowl, mix butter and sugars - add eggs and applesauce - mix until smooth
  3. In small bowl, mash bananas - add bananas, yogurt and vanilla to the sugar and butter mixture - stir until smooth
  4. In medium bowl, sift together flour, baking soda, cinnamon, salt and pumpkin pie spice - fold dry ingredients into the wet to make a thick batter - don't over mix
  5. Divide batter evenly between the two bread pans - bake 45-55 minutes - let the loaves cool for 10 minutes - then turn them out to a wire rack to let them cool completely
