Ingredients:

  • 1 cup flour
  • 1 tbsp cinnamon
  • 1 pinch salt ( kosher)
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup pumpkin
  • 1/4 cup canola oil

Directions:

  1. Preheat oven to 350.
  2. In one bowl mix the pumpkin,egg,oil,sugar,vanilla. In another bowl mix all the dry ingredients. Combine the dry into the wet.
  3. Line muffin tin with paper muffin liners.
  4. Scoop 2 tbsp into each muffin cup. Bake for 25 to 30 min till tooth pick comes out clean from center of muffin.
