Greek Style Tuna Melt on Potato Pancakes

Ingredients:

Directions:

  1. In medium bowl, mix all tuna ingredients well. Refrigerate until ready.
  2. In large bowl, mix hash brown, eggs, olive oil, flour until uniform.
  3. Heat oven to 350.
  4. Heat oil on flat grill or large frying pan.
  5. Drop hash brown mix with Tablespoon or teaspoon, depending on need, flatten with spatula, grill 5-6 minutes per side. Keep pancakes warm inches oven.
  6. When finished, line large baking pan with potato pancakes, top with tuna mix, sprinkle with goat cheese.
  7. Bake in oven 10 minutes, last 2 under broiler. Serve hot.
