Directions:

  1. Cook potatoes until tender, combine with olives and fetta in a large bowl. Boil garlic for 5 minutes then peel. Puree garlic with oregano, red wine vinegar and olive oil. Toss potatoes with the dressing , parsley and salt and pepper.
