Grapefruit Chicken

Ingredients:

Directions:

  1. Peel and section the grapefruits, reserving 1/2 cup juice.
  2. Set sections and juice aside heat a skillet and spray with non-stick coating.
  3. Sprinkle both sides of the chicken with the salt and thyme.
  4. Saute until browned and cooked through.
  5. Remove to a platter.
  6. Add the 1/2 cup grapefruit juice, jelly and butter to the pan, bring to a boil.
  7. Cook stirring constantly until the sauce thickens slightly, about 2 min.
  8. Spoon the sauce and sections over the chicken.
