Grandma Nancy's Oatmeal Cake

Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 cups hot water
  • 1 cup packed brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1 tsp vanilla
  • 2 large eggs
  • 1 cup coconut
  • 1 cup margarine
  • 1/2 cup walnuts
  • 3 tbsp milk
  • 1 1/2 cups packed brown sugar

Directions:

  1. Pour hot water over oatmeal; set aside.
  2. Cream together sugars and shortening, then add eggs.
  3. Sift together dry ingredients and add to the wet.
  4. Stir in oatmeal and vanilla.
  5. Pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
  6. Topping: Combine butter, milk and sugar in a small saucepan.
  7. Bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.
  8. Spread on cake and broil until brown (WATCH CAREFULLY IT WILL BURN FAST).
