Ingredients:

Directions:

  1. Clean and rinse peas.
  2. Add peas to 3 quarts of rapidly boiling water.
  3. When the peas are bright green and still crisp remove with a slotted spoon to a bowl filled with ice water to rapidly cool and stop the cooking to keep them crisp.
  4. Add garlic, finely chopped mint, lemon zest, the juice of one lemon and the white pepper to a mixing or serving bowl.
  5. Toss well and serve.
