Directions:

  1. In large bowl whisk together barbecue sauce and mayonnaise
  2. Finely chop chipotle, whisk into dressing
  3. Discard bones from chicken, cut meat into 1/2 inch pieces
  4. Finely chop enough onion to measure 1/3 cup
  5. Finely chop bell pepper
  6. Finely chop cilantro
  7. Add onion, bell pepper, and cilantro to chicken
  8. Stir all to combine
  9. Season with pepper
