Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix the crumb topping together and set aside.
  3. Butter a 13x9 inch pan.
  4. Whisk flour, salt,thyme and pepper into the milk mixture.
  5. Place sweet potatoes in a large pot and cover with the milk mixture.
  6. Add bay leaf.
  7. Bring to boil, reduce heat to low and simmer uncovered for 4 minutes.
  8. Add Yukon gold potatoes and simmer uncovered to 8 minutes or until they are tender.
  9. Remove from heat and discard bay leaf.
  10. Spread potato mixture into prepared baking dish
  11. Bake for 20-25 minute.
  12. Add crumb topping and broil for 3 minutes or until golden in colour.
