Ingredients:

  • 1 3/4 lbs nectarines (about 5)
  • 1 1/2 lbs peaches (about 4)
  • 2 tbsp lemon juice
  • 5 1/2 cups sugar
  • 1 oz dry pectin (1 envelope)
  • 1/2 tsp butter

Directions:

  1. Peel, pit and coarsely chop nectarines and peaches separately. Mash both fruits. You should have 2 1/4 cups nectarine mixture and 2 cups of peach mixture.
  2. In a large saucepan combine the mashed fruits, raisins and lemon juice.
  3. Place sugar into a bowl and set aside. Add the pectin and butter to the fruit and bring to a full rolling boil over high heat, stirring constantly.
  4. Add sugar quickly and bring back to a full rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim off any foam. Stir in almonds.
  5. Ladle into prepared jars leaving a 1/4 headspace. Process in a boiling water bath for 10 minutes. Adjust time according to altitude.
