Gluten Free Sweet Biscuits For Shortcake

Ingredients:

  • 1/3 cup shortening
  • 1/4 cup sugar
  • 1/2 cup potato starch
  • 3/4 cup cornstarch
  • 1/4 tsp baking soda
  • 1 1/2 tbsp xanthan gum
  • 2/3 cup milk
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract , optional

Directions:

  1. Preheat oven to 375.
  2. In medium bowl, cream shortening and sugar. Add remaining ingredients and mix until all lumps are gone. Batter will be quite soft and sticky.
  3. Use dough to make 8 drop biscuits. Bake 12-15 minutes - I baked them much longer, until tops are very lightly browned.
