Ingredients:

  • 1 1/2 cups rice flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 tsp cayenne pepper (optional)
  • 1 egg
  • 1 cup milk

Directions:

  1. Beat egg and milk together very well.
  2. Mix all dry ingredients and cheese together.
  3. Add wet ingredients to dry ones.
  4. Don't overmix.
  5. Bake at 210 deg C for approximately 12 minutes.
  6. Diced bacon, onion, parsley and corn kernels can be added to an extra savoury and high protein muffin.
