Ginger Lime Zucchini

Ingredients:

  • 8 inches long zucchini
  • 1/2 inch piece gingerroot, peeled and minced
  • salt and pepper

Directions:

  1. Slice zucchini very thinly and cook for 5 minutes in boiling, salted water. While zucchini is cooking, melt butter in frying pan and add onion and ginger once bubbles have subsided. Cook over medium low heat until onion is wilted and just about to turn golden. Add drained zucchini to frying pan and saute over medium heat for 2 minutes. Remove pan from heat. Squeeze juice of lime piece over zucchini, lightly salt and pepper, and toss ingredients in pan to mix. Serve immediately.
