Ingredients:

Directions:

  1. Peel the eggplant, and cut into circles 1/4 wide.
  2. Cut each circle into 1/4 strips.
  3. Sprinkle with salt and let stand for 30 minutes to allow the liquid to draw out.
  4. After 30 minutes, drain and dry with paper towels.
  5. Combine, soy sauce, mirin, and ginger.
  6. Marinate eggplant for 3 hours.
  7. After teh eggplant has marinated, place it and the marinade in a shallow pan.
  8. Broil (in a preheated broiler) for 5-7 minutes. (or up to 12 minutes if you prefer it softer)
