German Mushroom Soup

Ingredients:

Directions:

  1. In large saucepan, saute mushrooms in butter until lightly browned.
  2. Add onion and saute until softened.
  3. Mix in flour and cook until bubbly.
  4. Add salt, thyme and ketchup.
  5. Remove from heat and gradually stir in chicken stock or broth.
  6. Return to heat and cook until soup gently boils.
  7. Cover and simmer 15 minutes.
  8. Stir in half and half and heat until soup steams.
  9. Beat together egg and lemon juice. Stir a small amount of hot soup into egg mixture and return all to saucepan.
  10. Cook, stirring, until hot but not boiling.
  11. Season with additional salt to taste.
