Garden Fresh Spaghetti Sauce

Ingredients:

  • 2 tbsp olive oil
  • 1/2 onion
  • 4 garlic cloves
  • 1 tsp oregano
  • 1 tsp basil
  • 1/4 cup red wine
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions:

  1. Blanch and peal the tomotoes. I leave the seeds in as they are small in this type of tomato.
  2. 1/2 and run the tomatoes through a food processor or blender.
  3. Saute onion and galic in the olive out.
  4. Add red wine.
  5. Add tomato sauce from step 2.
  6. Add oregano, basil, salt and pepper.
  7. Let simmer. The length of time will depend on how thick you want the sauce.
