Garam Masala Sweet Potato Patties

Ingredients:

Directions:

  1. Combine, mashed cooked sweet potatoes with seasonings to taste
  2. Blend in egg
  3. Stir in enough Panko bread crumbs just to bind ( perhaps 1/2 cup )
  4. Form into patties by hand
  5. Fry in a coconut oil until golden brown on both sides ( I use a non stick pan )
  6. Serve hot or warm
  7. Top if desired with yogurt, pesto, sour cream etc
  8. Note: these reheat well in the micro
