Ingredients:

  • 1 cup lentils
  • 1/2 cup quinoa
  • 1/2 cup bulgur
  • 1/4 cup peanuts
  • 1 cup tofu
  • 1 cup cabbage
  • 1 cup carrot
  • 1/4 cup sesame seeds
  • 3 garlic cloves
  • 2 tsp ginger
  • 2 tbsp soy sauce
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • 1 tbsp olive oil
  • 1 tsp salt

Directions:

  1. Cook lentils, quino and, bulgur.
  2. Saute or toast tofu.
  3. Mix the above ingredients with remaining ingredients Chill.
  4. Wrap filling in tortilla shells.
