Ingredients:

Directions:

  1. Cook the rice in a large pan of boiling water according to pack instructions, adding the peas and sweetcorn 2 minutes before the end of the cooking time.
  2. Meanwhile, heat the oil in a large wok or frying pan and add the ginger and garlic.
  3. Toss in the frankfurters and stir fry until cooked through.
  4. Toss the scallions in the pan.
  5. Drain the rice and vegetables and add to the pan tossing until well mixed with the frankfurters and spring onions. Quickly stir in the beaten egg and stir fry until mixed into the rice and cooked through.
  6. Add the soy sauce, if using and stir fry for a couple of minutes before serving.
