Ingredients:

Directions:

  1. In a small saucepan, combine 1 cup water, half of the mint leaves, the sugar, vinegar and pepper.
  2. Bring to a boil, then lower the heat and simmer for 5 minutes.
  3. In a small bowl, stir together the cornstarch and 4 t. water.
  4. Stir into the saucepan and bring to a boil.
  5. Remove from the heat and let cool for 10 minutes.
  6. Strain.
  7. In a large bowl, toss the dressing with the fruit.
  8. To with remaining mint leaves.
