Fruit Cobbler Crumb Cake

Ingredients:

  • 4 cups fruit , of choice prepared as necessary (peeled, cored, etc.)
  • 1 1/2 cups sugar
  • 2 tsp cinnamon or 2 tsp nutmeg , if desired
  • 4 cups baking mix , reserve 1 cup
  • 2 cups milk
  • 2 eggs
  • 2 tbsp butter or 2 tbsp margarine

Directions:

  1. Prepare fruit as necessary and set aside.
  2. Grease well a deep disposable aluminum baking dish (10 - 13 x 8 ).
  3. Preheat oven to 400°F.
  4. Mix fruit lightly with 1 1/2 cups sugar and spice. Pour into prepared baking dish.
  5. Mix 3 cups of boxed baking mix with milk, eggs, and shortening. Pour over top of fruit.
  6. Sprinkle reserved 1 cup of baking mix over the mix in the baking dish.
  7. Sprinkle brown sugar over all, then dot with butter.
  8. Bake at 400F for 15 minutes, reduce heat to 350F and bake another 20 minutes or until fruit is tender and dough is firm.
