Friendship Zucchini Bread

Ingredients:

  • 1/2 cup friendship active starter
  • 1/2 cup packed brown sugar
  • 1/2 cup oil or 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 325 degrees F; grease a 9x4 loaf pan& set aside.
  2. In a bowl, combine starter, sugar, oil (or applesauce), eggs, vanilla& zucchini.
  3. In a large bowl, combine flour, baking powder, baking soda, nutmeg& cinnamon.
  4. Add wet ingredients to dry& mix well.
  5. Pour into prepared loaf pan.
  6. Bake 50-60 minutes.
  7. If you do not have starter from a friend, you can make your own by using Amish Friendship Starter by Kim D. Be sure to make your starter about a week to 10-days in advance of when you want to bake.
