Ingredients:

  • 1 tsp oil
  • 1/2 oz butter
  • 1 slice lemon

Directions:

  1. Clean the fish by removing its head, entrails, fins, and gills. (The fishmonger will usually do this for you. Frozen fish is already cleaned).
  2. Heat the oil and butter in a frying pan, and fry the fish over a moderate heat, for about 5 minutes on each side.
  3. Serve with a slice of lemon, or vinegar, and brown or French bread and butter.
