Ingredients:

Directions:

  1. Peel zucchini if you want to but dont have to
  2. Cut up squash
  3. Boil squash and zuchhini in salted water till tender
  4. Drain well
  5. In a large bowl mix eggs and mayonnaise
  6. Green pepper
  7. Cheese
  8. Onion
  9. Season to taste.
  10. Add drained squash mixture
  11. Coat well
  12. Crush crackers up
  13. Grease casserole dish.
  14. Place crackers on bottom spread out
  15. Cut up butter place on top of crackers
  16. Pour mixture on top
  17. Then open fried onions sprinkle on top
  18. Place in oven 350
  19. Till it bubbles or 30 min which ever your oven does first
  20. Remove let rest 5 min and serve
