Ingredients:

Directions:

  1. Spray a large non-stick skillet with cooking spray
  2. Heat over medium until hot
  3. Add spinach, mushrooms, salt and nutmeg; cook 2 - 3 minutes or until thoroughly heated, stirring occasionally
  4. Remove mixture from skillet; set aside
  5. Let skillet cool 1 minute. wipe skillet clean with a paper towel
  6. Spray skillet again and return to medium heat
  7. Pour half of the egg product into the skillet; cook 3 to 4 minutes or until set but still moist on top,
  8. Lift edges occasionally to allow egg to flow to bottom of the skillet
  9. Top one side of cooked egg with half of the spinach mixture and half of the cheese
  10. With a pancake turner, loosen edge of omelet and fold half over filling
  11. Cover skillet and cook 1 minute
  12. Slide from skillet, sprinkle with pepper and cut in half to serve
  13. Repeat with remaining ingredients
  14. Calories 160 per serving
