Ingredients:

Directions:

  1. Combine 9 eggs, cream, salt and pepper in a large mixing bowl, combine cream & eggs together by using a fork or whisk.
  2. Take diced potatoes, place in saucepan, cover with warm water and boil for approximately 8 minutes or until tender.
  3. Next, once potatoes are tender, drain excess water, place in fry pan with 4 tablespoons of butter, cook for about 10 minutes or until browned.
  4. Take egg mixture and slowly add all remaining ingredients including peppers, mushrooms, cheese ham, add potatoes last.
  5. Pour egg mixture into a large casserole or baking dish. Place into a per-heated 400 degree oven for approximately 18-20 minutes. You can check too see if omelet is cooked by poking with toothpick or knife.
  6. You may sprinkle additional cheese over top of omelet.
  7. Allow to cool for about 5 minutes and serve.
