Fig-Glazed Pork with Apples and Fennel

Ingredients:

  • 1 1/4 lb pork loin
  • 1/3 cup jam , fig
  • 1 tbsp mustard, dijon (i2046)
  • 1 bulb fennel (i11957)

Directions:

  1. Preheat oven to 400 degrees
  2. Season the pork with salt & pepper
  3. In a bowl, microwave the jam for 20 seconds or until spreadable
  4. Mix with mustard and set aside 2 tablespoons
  5. Rub the remaining glaze all over pork.
  6. Transfer pork to a lightly oiled shallow baking pan
  7. Bake for 20-25 minutes or until an instand-read thermometer reaches 155 degrees.
  8. Meanwhile, trim shoots and core fennel bulb; quarter and slice thinly.
  9. In a large lightly oiled preferably non-stick skillet over medium-high heat, add apples and fennel and saute for 10-15 minutes or until softened
  10. If food is sticking, add 1 or more tablespoons water
  11. Reduce heat to low and add reserved jam mixture
  12. Cook for 5 minutes, or until mixture is tender, stirring occasionally
  13. Let pork rest for 3 to 5 minutes before slicing
  14. Serve with apple-fennel mixture
