Fat-Free Banana Muffins

Ingredients:

  • 1 1/2 cup flour
  • 0.58 cup sugar ( little over half a cup, i'd use 3/4 cup)
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt (optional)
  • 1/2 tsp. cinnamon
  • 1/3 cup. skim milk

Directions:

  1. Grease 12 muffin tin cups.
  2. Combine flours, sugar, baking powder, baking soda, salt and cinnamon and stir thoroughly.
  3. In a large bowl, beat egg whites lightly with a wire whisk or fork.
  4. Stir in mashed banana, milk
  5. Add flour mixture and stir until well blended.
  6. Spoon into prepared muffin cups.
  7. Bake at 400 degrees for 20 to 25 minutes or until firm to the touch.
  8. Cool in pan for 5 minutes, then remove and cool on a wire rack.
