Ingredients:

  • butter pecan banana bars
  • 2 1/2 cups flour
  • 1 2/3 cups sugar
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup buttermilk
  • 3 medium-size ripe bananas, mashed
  • 2 eggs

Directions:

  1. Combine flour, sugar, baking powder, baking soda, and salt in
  2. Large mixing bowl. Add softened butter, cut in chunks,
  3. Buttermilk, and bananas, and beat well using an electric mixer.
  4. Add eggs and mix well. Stir in nuts. Bake in an ungreased
  5. 15 inches x 10 inches x 1 inch pan for 30 to 35 minutes. Cool.
  6. Frost if desired with a mixture of 1/4 cup soft butter, 1 1/2
  7. Cups confectioners' sugar, 1/2 teaspoon vanilla, and enough milk
  8. To reach spreading consistency.
  9. Beat frosting ingredients until smooth, and fold in 1/2 cup
  10. Finely chopped pecans.
