Farmers Potatoes Or Potata Alla Contadina

Ingredients:

  • patate alla contadina
  • (farmer's potatoes )
  • pinch of coarse salt
  • 1 large clove garlic
  • 10 springs italian parsley
  • salt and freshly pepper to taste

Directions:

  1. Place a flameproof casserole containing the potatoes, about 7 cups of cold water and Kosher or grey salt on a medium flame.
  2. Simmer until the potatoes are soft (about 35 minutes).
  3. Meanwhile, finely chop first the garlic, then the parsley plus basil. Place them in a serving bowl, along with the olive oil and salt and freshly ground pepper to taste.
  4. When the potatoes are ready, peel them (or not) while still very hot and cut them into pieces about 1 inch square.
  5. Add the potato pieces to the bowl and mix with the other ingredients, using a wooden spoon.
